First, classic ice cream should have a clean, sweet taste with a hint of vanilla. The texture should be dense and creamy, devoid of lumps or ice crystals. According to Roskachestvo, the color of the ice cream can range from milky white to a cream shade, with room for a few brown speckles.

For ice cream with a chocolate coating, watch out for a white bloom, numerous damages, or spots. These signs may suggest a production misstep or improper storage. Deformed ice cream might indicate poor storage conditions or an approaching expiration date, the experts explain.

When selecting a product, Roskachestvo recommends reading the composition carefully. Ice cream should contain at least 40% milk, with the remainder being non-dairy components, excluding plant-based fats, except in ice cream with a milk fat substitute, which can make up to 50% of the total fat content.

Additionally, the composition will include stabilizers, which maintain the product's stability during storage, boost resistance to melting, minimize the risk of shrinkage, and help maintain the dessert's shape.
